The Earl Grey is excellent when used as an ingredient. Layer a roasting tin with a large piece of tin foil and add a bed of fennel fronds and some cut open fresh apricots (stones will add flavour but are not for consumption)Place a large piece of salmon fillet on top and massage the flesh with some extra virgin olive oil and loose earl grey tea. Foil over and slow cook in your oven.
